2 – ALMOST – 3 {#2}

Last week was the week of food… for better or worse.  Cooking has always been fun for me because I am constantly trying new recipes and finding new ingredients.  I like spicy, ethnic, creative food and normally Diana tolerates my taste bud’s sense of adventure.  As all pregnant women do, Diana’s tastes have changed.  So I have done my best to adapt…. but inevitably failed miserably.  I made a vegetarian Indian meal – Chickpeas in Spicy Tomato Gravy – which I thought was a home run… she took two bites before she went for the PB&J.   #fail :(

This past weekend we headed out to the Boston area to spend the weekend with family.  Not only are they some of the most educated people and kind people, but they know how to cook like you wouldn’t believe.  We had two of the most unbelievable chinese dishes that satisfied both Diana and me.   #Yes :)

Knowing that I was going to have some tasty goodness, I brought one of Diana’s Christmas presents with me so I could return the favor.  Ebelskivers are Danish for “oh my God, am I really eating something this good?”   They are little pancakes that can be filled with jam, bits of fruit, or even heaven itself – Nutella.  I bought the pan, cookbook and the flipping sticks at Williams-Sonoma which can all be found here.  #Yes :)

Anyone in the Boston area can tell you it was cooooold this past weekend.  Seriously, after two days of 60 degrees, the wind and cold cuts straight through you.  Diana, once again proving how smart she is, brought her full winter gear… me, not so much.  As I froze from the arctic breezes, she stayed nice and bundled up in her Carol Bergmeier exclusive cap and mittens that she received for Christmas.  That smile you see is Diana happy she’s warm and RIGHT!  Diana #Yes :) … Jake #Fail :(

    I just squealed reading this….because you talked about Æbleskiver!!!! When I lived in Denmark I loooooved these! They are a very traditional Christmas treat that we would purchase from a street vendor (similar to chestnuts in NYC) as we strolled down the lit up streets of Copenhagen. This post made me smile…big time!
